Because he picked Cho out of any other girl in the school. Her name “Cho” is evidence of the author’s ignorance, and the decision to use an ethnic name shows that her race is meant to be a conspicuous part of the characterization.

It’s a song, guys. It has no reflection on the writers’ beliefs or lives. It’s meant to be satirization of the characters.
If you notice carefully, it doesn’t actually SAY that Cho is Asian. It just says that she is beautiful and has dark hair. For all we know, she could be Southern. Maybe her parents just liked the name Cho. And maybe Chang is her last name because she was adopted by Asians. Think about it.
